You just use the category tags. Whatever tag you come up with just put it in a tag and it will make it for you. That pretty much makes it limitless. I guess I could have a drop down for the existing categories so people kinda know what is already being used but if you have another category you need just use the tag like this...
[category=Anything At All]
and then you'd have a category called "Anything At All".
